The methods and recipes of the Spanish conquistadors, who learned them from the Aztecs in the 16th century, inspired Ajala to make Rustic Chocolate. This chocolate is made with select cocoa beans from the Dominican Republic and Tanzania. Dried cane juice (panela) is added just before the bars are poured, which is why the sweet crystals remain. The flavours of the cocoa beans and panela mingle in the mouth, creating a slightly different but always amazing and crunchy experience each time.
Rustic Chocolate won a bronze medal in the prestigious International Chocolate Awards in 2018 and 2022, where bean to bar chocolatiers from across Europe, Africa and the Middle East compete for medals.
Finely roasted, ground with granite stones, tempered, packed with love.
