About the Farm and the Farmer
Sebastián Ramírez is the founder of the El Placer Farms project. He began working with coffee from his own farm and his father’s farm, but gradually started involving coffees from other family members as well. His goal was to build a direct connection between coffee producers and roasters, eliminate middlemen, and offer coffees with a unique character, which led to the creation of El Placer Farms – a project that now includes multiple farms, not just one.
Sustainability is a key priority for him and his team – they use innovative irrigation systems on their farms and focus on natural, eco-friendly coffee processing methods that minimize environmental impact. In the future, they plan to further reduce their ecological footprint and develop sustainable agricultural practices.
Besides cultivating and processing coffee, Sebastián is also involved in community projects, such as rescuing abandoned animals through the Bienestar Animal initiative, thanks to which many dogs have already found a new home. El Placer Farms therefore aims not only to produce exceptional coffee but also to have a positive impact on the local community and the world.
Coffee Processing
95% ripe and 5% semi-ripe cherries are handpicked. This is followed by anaerobic fermentation in 200-liter tanks for 120 hours at a constant temperature of 18 °C, with CO₂ injection and the addition of wine yeast. Then the coffee is depulped and the second phase begins – anaerobic fermentation for 72 hours with CO₂ injection and the addition of dehydrated peaches with glucose, while monitoring the tank’s pH. During drying, the coffee is inspected and dried at 40 °C and 25% humidity for approximately 15 days. This is followed by a second drying stage in the shade under tree canopies for about 5 days. Both drying stages proceed slowly and in a controlled manner. Finally, the beans are stabilized – the coffee is stored in GrainPro bags for 15 days to allow its flavors to settle.
We roast coffee 3× a week, so you always receive it freshly roasted. We’ve been roasting our own coffee since 2019 in Silůvky, Moravia.
